In my experience some signings have limits on the number of items, but with so many signings scheduled for the show, I'm sure you'll be able to get all five done eventually. Yes, there are Gravel HC left as of right now. The HC was solicited in last month's previews (not the one that came out this week, but the one before that). If your LCS has already placed thier order with Diamond, ask them if they can advance reorder it for you. No orders are guaranteed though, not even the initial orders of the book.
