And my grandad used to make tea wine.<br /><br />He used to mix it up in plastic dustbins ("plastic garbage cans" for our Colonial cousins).  Basically, he would toss A Shitload (that's an exact measurement) of cheap teabags into the bin, and throw a few gallons of boiling water over the top of them, followed by what was probably two or three pounds of sugar and whatever yeast was indicated.  He would them fish out the myriad teabags with a long-handled fishing net, lock it up and put it in the bathroom for a couple of months.<br /><br />We ended up being given bottles and bottles of the stuff. I got to quite like it, actually.<br /><br />Now, the banana wine -- which he made using exactly the same tools and process, only, obviously, using a quarterton of badly aged bananas -- that was something else entirely...]]>

Takes <br />about 6 weeks but you get 6 bottles and the pack costs about 2 quid so it's worth it if you have time. One day I would like to grow my own grapes and then make the wine myself, experimenting with different fruits etc.]]>

			<![CDATA[I've seen tons of different home brews. Then again, I spent four years at a chemical institute, where the 96% ethanol we used in experiments was liberally stolen for... other uses. I once had a fairly decent, or at least drinkable, rum made from rum extract bought in a drugstore, and the right proportions of water and ethanol. Thankfully, the only risk of blindness here was accidentally picking the wrong bottle.<br /><br />By the way, 96% ethanol is a treacherous liquid. The taste is quite well covered in most sodas, and as you get more drunk, you tend to forget that this stuff is about twice as strong as most conventional boozes, which is when you end up doing 1/5 ethanol to soda. Which is followed by you waking up in a different country with no money or identification, dressed in a torn ballerina costume, with an uncomfortable soreness around your nether regions, and a strong odor of goat hanging off you.]]>

The guys living there were art kids, and their final project was this.   They'd throw enormous parties and people would get smashed and eventually scribble something on the wall or paint/draw.  The bathroom was the most entertaining as one night a girl emptied the contents of her keeper onto the wall in a glorious splatter and then proceeded to write "I LOVE MY RAG" with a pad.<br /><br />....and for some reason I now want spaghetti.]]>

That's what most home winemakers use with great success, and there are some things that you ought not make wine from . . . even the things you can. I made dandelion wine a few years back (used too many dandelions) and it stunk of piss. Mind you, if you held your nose and could stomach the stuff it did have a kick (but I only managed to do that once before I tipped it all  down the sink - and it had to be bad for me to throw away any kind of alcohol.).]]>

When we were kids we'd go up there on holiday, get off the train and go and buy little bottles of it, then sit on the city walls and think about Viking marauders, sailing in up the Tweed. Happy days.<br /><br />There's also a tradition of deeply tacky wench-filled Meadery restaurants in Cornwall. She takes a big glass jar and fills it to the top with blackberries (they need to be unwashed because this uses a wild yeast that grows on them)  then she pours honey in till it covers the blackberries.  covers the top with a scrap of muslin and a rubber band and leaves it be for two months (needs to be kept at about 65 F). No raisins for one thing, and a different prep. method. So far I remember having about a gallon of water boiling with honey, 3 oranges worth of grated peel with some fruit in there too, 3 lemons worth of peel, and I think about a strainer full of flower-heads (yeah, I know, how exact). I think it was 2 1/2 cups of cane or plain white sugar, 1/4 cup brown sugar. Also, yeast. Boiled it for hours, I remember that, because we couldn't leave the damned house. Four hours, maybe? The 30-day sitting time was the same though. We cleaned out a bunch of old beer bottles and sat them out in the garage, covered, so each bottle would ferment separately. <br /><br />I'll repost a correct recipe whenever I can find the thing. And yes, I liked it--very sweet, almost syrupy. Extremely citrus with a hint of pleasant bitterness. Also, as I mentioned before, goddamn strong. Maybe it's because I'm a lightweight, but two of them had me wobbly, and I can have two regular beers without a blink.]]>

One day we will show them all. :)<br /><br />From what I've seen so far, I wouldn't try making tea wine if you paid me for it. I did get it above 15% so that much I'm grateful for, but I don't think this is intended to be a very Dry wine. I'd like to find some corn sugar because I really don't like how fermented sucrose feels/tastes. Also SOME claim that I left it to brew too long, and while I'll humor them, I still feel the best cup of tea is one you forgot you were brewing and then find on the stove 5-10 minutes later.]]>

			<![CDATA[Fridge Cider. <br /><br />My friends and I used to brew this to get wasted on, back when we were too young to legally buy booze. Take care because the bottles WILL explode violently if you don't let the gas out.<br /><br />2 X 2-litre plastic Coke bottles with screw-on lids<br />2 litres of apple or grape juice<br />2 cups sugar<br />Baking yeast<br /><br />Pour a litre of fruit juice into the bottom of each Coke bottle.<br />Add a cup of sugar and half a teaspoon of baking yeast to each bottle, then screw on the lid and shake well.<br />Fill each bottle to about 5 cm from the top with fairly warm water and screw on the lid.<br />Leave in a warm place for 3-4 days, making sure to unscrew the lid a couple of times a day and slowly let out the gas.<br />Leave in the fridge for another 3-4 days. Tastes like sweet fruity soda, tends to have about a 5% alcohol content.]]>

			<![CDATA[Oh - nearly forgot this one.<br /><br />You can add stuff to brews in several ways - the best way for most spices and stuff would be by boiling it directly in the wort, like hops, or in a cotton bag. If you can sterilize it, you can also get additives in at various stages in the fermentaton or aging process.<br /><br />With a strong wine yeast, four or five kilos of honey added to 25 liters of water makes a mead wort. Mark the height of the water before adding mead and additives, then boil down to that height. One classic recipe is spiced with caravay seeds. Different types of honey or other sugars makes for different flavours. Fruits, citrus and cinnamon are popular. In addition, all kinds of medicinal herbs that can take boiling can go into it, as well as in old-style medicinal beer. One or two additives is probably the limit if you want a clear flavour, though. Examples include absinthe herb, angelica archangelica (the genuine viking age additive), juniper berries, rosemary or claimed hangover remedies like creeping cinquefoil and mead herb.<br /><br />A more exotic variant use wood as a spice. Birch goes into a few traditonal norwegian dishes, and you can buy blocks of it specially prepared for the purpose in the shops here. I'm told sap-rich twig bundles, discs of young branches and so on works just as well. Then there's the wood called "tyri" (the raw material for tar), which is the resin-saturated heartwood of pine trees which died and dried out on their roots. Lots of other woods will probably release interesting flavours as well. However, the original thread had some warnings - names and types of wood does not always translate between continents, and some, like herbs, are poisonous, or have undesireable effects (diuretic, abortificant, diarrhea...)]]>
